An Indian slant to an old favourite. This is a really homely dish, suitable for breakfast, a light lunch, or when you return tired after a hard day’s night. I particularly love it with garlic, as it brings out the flavour of the eggs, but you might not want to include it for breakfast!

Ingredients

  • 8 eggs beaten
  • tbsp ghee
  • 1 medium onion finely chopped

Method

Heat the ghee in a non-stick pan, then add the onion, plus a pinch of salt to help bring out its sweetness, and sauté until translucent. Add the cloves, cinnamon, cardamom, garlic and chillies. Stir in the turmeric, and continue to cook on a low heat for a further 3-4 minutes, to allow the onion to s
