Uttar Pradesh is renowned for its kebabs and here is one example of the many varieties. The term ‘Galouti’ actually means ‘melt in the mouth’. This would be an opportunity for me to impress you with my extensive linguistic skills and explain the etymological derivation of the word Galouti. Unfortunately, I don’t have a clue which of the many languages or dialects it comes from. All I know is that it describes these kebabs perfectly.
