A lamb petis is a spicy potato cutlet stuffed with minced lamb. It is good either as a starter or as a snack and goes well with many chutneys; try Tamarind Chutney or Coriander and Walnut Chutney as an accompaniment. If you’re having a drinks party, make them bite-sized and serve as canapes.
