For a luxurious afternoon snack or starter, try these wonderfully tasty deep-fried king prawns, coated in a piquant batter. They’re superb with Tamarind Chutney.
Pour the milk into a bowl, add the saffron and leave to infuse. Place the prawns in a bowl and season lightly with salt and black pepper. Add the ginger, garlic, turmeric and a few pinches of the coriander and mix well. Cover and leave to marinate in the refrigerator for 20-30 minutes.
Meanwhile, in a large bowl, mix together the gram flour, the cornflour, dried mint, chilli powder and
