A delicious hot and spicy Indian seafood dish that works well with Cucumber Raita or Fresh Cucumber and Beansprout Salad.

Ingredients

  • 300 g (10½ oz) cod fillet skinned, boned and cut into 5 mm (¼ inch) dice

Method

In a food processor blend half the cod to a smooth paste. Combine this paste with the rest of the chopped cod, salmon and lime zest in a large mixing bowl. Add the fennel, fresh coriander, green chillies, spring onions, fennel seeds, coriander seeds, salt, garlic, ginger, crushed black peppercorns and lime juice, and mix well. Mould the mixture on to 12 skewers, or alternatively shape into fish
