This dish is a popular favourite at dinner parties, largely because it produces a fabulous result with minimum effort. Served with Lemon and Ginger Rice, it is a marriage made in heaven (well, in your kitchen actually).

Ingredients

For the Koftas

  • 450 g (1 lb) minced lamb
  • 2-3 spring onions finely chopped

Method

Combine the ingredients for the koftas in a large bowl, mixing thoroughly. Shape into meatballs about the size of a golf ball. Keep to one side.

Heat the oil in a non-stick pan, add the onions and fry until golden brown. Remove with a slotted spoon, reserving the oil in the pan, and drain on kitchen paper. Set aside a tablespoon for the garnish. Put the rest of the onions in a blender o
