Maa Ki Dal means ‘mother of dals’. The recipe comes from the Punjab and it is a very rich and earthy dish. Traditionally, it is cooked on burning embers but, if you’re short of those, it works just as well on the hob. Depending on your viewpoint, it is either a cream dream or a nightmare. If you’re going to worry about calories, you’d be better off with the previous recipe, Spicy Red Lentils.
