This is a wonderful way of preparing aubergines. I simply love the luscious texture of it, and the way the combination of sweet, piquant, savoury tomato sauce cooled down with mint yoghurt just melts in the mouth. In the Channel 4 TV series A Place in France, I served it to Jeremy and Nikki, a honeymoon couple at the B&B. But don’t panic. You are allowed to eat this if you’re single.
