This is the simplest of pickles to make and the most versatile. I have served it with Thai as well as Indian curries, but it can also be used to liven up any ‘picklish’ situation, such as a plate of cold meat or cheese.

Ingredients

  • 3 large Granny Smith apples washed
  • 2 carrots cut into 5 cm (2 inch) julienne strips
  • 10 green chillies slit in half lengthway
