A wonderfully vibrant, sunset-coloured dip, reminiscent of cocktails in the Caribbean. A perfect complement to Duck Samosas.
Heat the orange juice, lime juice and grenadine in a non-stick saucepan. Add the cloves, cinnamon and star anise, bring to the boil, then lower the heat and simmer until the liquid has reduced to a jam-like consistency. Add the chilli to the pan at the end, to give the flavour a sharp kick. Allow to cool before serving.
