A dip with a pronounced kick, which goes exceedingly well with Crab Samosas.
Heat the oil in a saucepan, then add the cloves, black cardamom, green cardamoms, and cinnamon. After a minute, add the garlic and ginger and cook for a further 1-2 minutes. Add the tomatoes, turmeric, cumin and chilli powder and continue to cook for 15-20 minutes. Remove from the heat, allow to cool slightly, then process until smooth in a food processor or blender.
