A traditional dish served on the Muslim festival of Eid. The vermicelli (sivayyan) is covered with subtle spices, almonds and pistachios, and floats in a delicious, saffron-flavoured milk. For a dessert with such delicate, unique flavours, it is very quick to prepare. It will keep for 3 days in the refrigerator and can also be frozen for 2 months. Make sure you defrost completely in the refrigerator overnight before reheating.
