  • Chicken livers 500 g
  • Smoked streaky bacon 100 g piece
  • Onion

Method

  1. Cook the onion and garlic in the walnut oil until golden. Add the chicken livers, the chopped bacon and the juniper berries. Sear the livers and remove from the pan.
  2. Deglaze the pan with the port, scraping up all of the bits on the bottom and cook until syrupy.
  3. Process the whole mixture with 150 g butter, then add the cinnamon and salt.
