Method

  1. Peel the onions, and simmer the pig’s trotters with the onions and the bouquet garni for 3 hours; the meat must be completely falling off the bones.
  2. Remove and chop the onions; completely debone the trotters and mix the meat with the chopped onions.
  3. Quickly wilt the spinach in the butter.
