  • Green cabbage 1
  • White haricot beans 300 g
  • Carrots 6

Method

  1. Slice the cabbage, removing the thick ribs. Peel all of the vegetables and slice them roughly.
  2. In a very large pot melt the duck fat, add the duck carcass and the onions and brown them.
  3. Add 3 litres of water, all of the remaining vegetables, the beans, bacon and ham hock, cook for 2 hours, season and then add the pieces of duck confit. Cook for a furt
