Method

  1. In a flameproof casserole dish, brown the rack of pork in butter and add the sliced onions. Add half the cider, cover and cook over a low heat for 1 hour 30 minutes. Season.
  2. Chop the apples into cubes. Add the potatoes in their skin, the bulb spring onions and cook for a further 20 minutes, then add the peas, the rest of the cider, the apples and cook for anoth
