  • Sauerkraut 1.2 kg
  • Duck fat or lard 40 g
  • Onion

Method

  1. Wash the sauerkraut 2 or 3 times in warm water.
  2. Chop the onion into small pieces. In a saucepan, brown the onion in the duck fat.
  3. Add some salt and pepper, the bay leaf, cloves, cumin and juniper berries to the sauerkraut. Add the water or broth and cook over low heat for 1½ hours with the lid on.
