  • A well-muscled free-range chicken who has been in contact with nature and skipped about every day looking for earthworms 1
  • Ripe tomatoes 6
  • Mushrooms

Method

  1. Cut the chicken into eight pieces.
  2. Blanch and peel the tomatoes and set aside the flesh. Peel and chop the shallots.
  3. In a heavy pan, sauté the chicken, the shallots and mushrooms until brown. Add the flour, then the white wine. Add the tomato flesh, bouquet garni and peeled potatoes, season. Cover for 30 minutes.
  4. Serve with the chopped herbs
