Method

  1. Remove the intestinal tract of the crayfish. Peel and slice the garlic and onions. Cut the chicken into eight pieces.
  2. In a heavy pot, sauté the chicken pieces, add the garlic and onions and season. Deglaze with the white wine and add the saffron and chopped tomatoes. Cover and cook on a low simmer for 30 minutes.
  3. In a frying pan, sauté the crayfish in
