  • Scallops 12
  • Poppy seeds 1 teaspoon
  • Lime 1

Method

  1. Remove the coral from the scallops, thinly slice them and arrange in a rosette pattern on the plates.
  2. Zest the lime and chop the zest finely. Make a vinaigrette by mixing the olive oil, soy sauce and lime zest. Glaze the scallops with the vinaigrette using a brush, sprinkle with poppy seeds and season.
