  • Cod fillets (centre-cut) 6
  • Coco de Paimpol beans (white haricot beans from Brittany) 300 g
  • Bouquet garni

Method

  1. Soak beans in cold water overnight. Cook the coco de Paimpol beans in a heavy-based saucepan filled with water along with the bouquet garni, peeled onions and bay leaf.
  2. Slice the shallot and the piquillo peppers and sauté in olive oil. Steam the cod fillets. Process the basil leaves with the olive oil until you have a smooth purée.
  3. Reheat the b
