Salted Lemon Caramel Batons

This is a variation on the salted caramel theme, which we use in the Billionaire’s Shortbread. It is a classic caramel; melting and buttery with the delicate flavours of lemon and salt coming through on the palate. After making and dipping, this bundle of sticks reminded us of faggots from childhood fairy tales like Hansel and Gretel.
