This is one of our summer collection truffles created by chocolatier Laurent Couchaux, a heavenly marriage of peppery olive oil and fresh citrus notes from lemon and basil, with white chocolate. It makes an excellent ‘extreme canapé’ with Parmesan or Grana Padano. The ganache needs to be made a couple of days before eating.
