I first experienced guimauves when our last chocolatier Laurent Couchaux made them at our Motcomb Street shop. They were a revelation, worlds apart from the commercially produced marshmallows I ate as a child. They keep well and make a fantastic present. For a pretty finish, dip them in Rainbow Sugar or tempered chocolate.
