Vastly different from fluffy industrial pink marshmallows, the beautiful intense pink colour in these special guimauves comes from using real fruit purée, which gives them a sharp fruit flavour and little chewy bits that cut through the sweetness. Experiment with unsweetened strawberry, blackcurrant, blueberry or passion fruit purée in place of the raspberry.
