Writing a message in chocolate adds a wonderful personal touch to a celebration cake. The golden rule is: remember you need to use mirror writing. Work quickly and confidently, and experiment with methods of applying chocolate to the acetate: a brush, your fingers, a piping bag or even a spray gun produce equally attractive results.


  • 200 g good quality dark chocolate, tempered
  • 50 g good quality white chocolate, tempered


Write your message on a sheet of greaseproof paper with a black marker pen or a pencil. Turn the paper over (placing it on top of a white sheet of paper if necessary, so that you can see the text as mirror writing) and place a sheet of acetate over it. Half fill a paper piping bag with tempered white chocolate, snip the end, and carefully trace the message on
