One of the Ten Commandments when working with chocolate is ‘thou shalt not mix water and chocolate’, so I was surprised when I came across Fabrice Gillotte, a French chocolatier who was making truffles with spring water. Everyone said they were sublime. These days Damian Allsop has made water ganaches famous in the UK. This recipe makes a decadent dessert, but it makes great truffles too; just use a little less liquid.
