Ingredients

  • 50 g good quality dark chocolate (65–70% cocoa solids), broken into small pieces
  • 30 ml whipping cream

Method

Place the chocolate in a heatproof glass bowl. Heat the cream and milk in a small heavy-based saucepan until almost boiling, then pour it over the chocolate and leave it to melt the chocolate for a few minutes before blending it to a smooth liquid with a stick blender.
