A delicious vanilla ice cream with soft chocolate ganache swirled in at the end.
For the ice cream, bring the cream and milk to the boil in a heavy-based saucepan. Meanwhile, in a mixing bowl beat the egg yolks with the sugar until pale, smooth and mousse-like. Gradually pour the hot cream and milk mixture on to the egg yolk and sugar mixture and whisk well, then pour it back into a clean pan and cook over a low heat, stirring all the time with a wooden spoon, until it reac
