These filled hen’s eggs are a perfect way of tricking small children, who will be thrilled by the chocolate filling, and we have been selling them for decades at Easter – they are a Rococo classic. Serve them for breakfast, high tea or as a dessert at the end of a dinner party. If you want to get really clever, you can fill quail’s eggs. It takes more skill, as they are so small and the shells are quite soft, but it’s well worth the extra effort. Wash the quail’s eggs before you start, as t
