This sits happily somewhere between a cake and a pudding. Inspired by Claudia Roden’s boiled orange and almond cake, it is dense and fruity, and the combination of Campari, orange and white chocolate works beautifully. You can make it without the cherries, if they are not in season, and you can make it gluten-free by replacing the self-raising flour with cornflour.
