Millionaire’s shortbread is a bit ordinary, and often made with industrial milk chocolate. This is a really high calibre version, made with Salted Lemon Caramel. If you want to gild the lily, decorate the top with edible gold leaf.

Ingredients

  • 130 g softened unsalted butter, diced, plus extra for greasing
  • 1 g Fleur de Sel salt (we use Halen Môn from Anglesey)

Method

Place the butter, salt, sugar and vanilla in a bowl and beat with a wooden spoon until light and fluffy. Stir in the ground almonds followed by the egg. Sift in the flour with the baking powder, mix until just combined and knead lightly on a clean work surface. Wrap the dough in clingfilm and chill for a few hours, or overnight.
