  • 2 crowns broccoli (2 lb | 8 cups | 910 g)

Method

Heat the oven to 400°F (200°C).

Cut the broccoli into florets by removing from the stalk and cutting the crown into bite-size pieces.

Combine the butter, lemon zest, Parmesan, parsley, salt, and pepper and mix until well combined.

Heat a glug of oil in a frying pan over medium-high heat until just about to smoke.
