Heat the oil in a frying pan until just about smoking. Remove from the heat, add the curry powder, and let bloom until fragrant, swirling in the oil to cook evenly. When it’s done sizzling, stir it into the yogurt. Dress the cauliflower with the yogurt and a big pinch of salt, and top with the herbs and almonds.
