This recipe is delicious in its simplicity—one of those magical dishes when the end is more than the sum of its parts. The only fussy bit is deciding how much celery to use. The recipe is written for one head of celery because most grocery store celery is very big and a quarter head per person is plenty. If it is small, use two; if long, cut it as needed to make it fit in the pan. I like to leave the core intact for ease of serving after it is cooked, but it isn’t critical.
