  • 1 bag (4 oz | 115 g) arugula
  • Olive oil

Method

Spoon the corn into four bowls or plates. Dress the arugula with a glug of olive oil and pinch of salt and pepper. Spoon the roasted mushrooms (warm or room temperature) over the portions of creamed corn and top with the dressed arugula.
