The testers of this book preferred this salad with a sweet onion. I like it with a storage or red onion. If you are not a red meat eater, this recipe pairs well with grilled fish, seared chicken, stewy black beans, or soft chickpeas.
In a large frying pan, toast the cumin until fragrant.
Add it to the olive oil and garlic and allow to steep for 10 minutes.
