This recipe is written for 5 lb (2.3 kg) of onions because that is a standard unit for a bag of onions, but caramelizing can be made with any amount of onions you have on hand. I generally caramelize onions in huge batches and use the food processor slicing blade to make quick work of getting the onion into slices.
