Method

Heat the olive oil, then remove from the heat. Add the cumin and let bloom. Add the garlic to the warm oil. When cool, combine with the lemon zest and juice and salt. Pour over the vegetables and herbs, and toss. Taste and adjust the seasoning and serve.
