I love Riesling wine, especially the incredibly flavorful and bone-dry versions being made in Northern Michigan. We have also been experimenting with nonlocal boxed wine—I haven’t found a Riesling I like very much among them, though they do make great cooking wine. The fruity almost-sweetness goes well with the nuttiness of the chokes. Everything has a home somewhere.
