Method

Heat the oven to 350°F (180°C). In a Dutch oven, heat a glug of oil and sweat the onion. Add the wine and cook until almost dry. Add the sunchokes, sour cream, and water, and stir to combine. Cover with a lid or foil, and cook in the oven until the sunchokes are tender, about 25 minutes. Sear the salmon skin-side down until medium-rar
