These are good fresh from the oven or cooled and then frozen and used months later. The roasting evaporates the water in the tomatoes and concentrates the sugar. Feel free to add garlic, chili flakes, or oregano.

Ingredients

  • As many cherry tomatoes as you can get your hands on
  • Big glug of olive oil
  • Sprinkle of salt and freshly ground black pep

Method

Heat the oven to anywhere between 300°F and 400°F (150°C and 200°C)—the higher the temp, the more often you’ll need to stir. Toss together the tomatoes, olive oil, and salt and pepper. Put in an ovenproof baking dish and bake, stirring occasionally, until the tomatoes burst, and the juice is redu
