Here is another excellent way to treat salmon. This recipe comes from T.R. Durham, whose Ann Arbor company, Durham’s Tracklements, is my favorite purveyor of smoked salmon. T.R. uses various spice mixtures to enhance the flavor of his salmon; he calls this particular blend his “St. Petersburg style.” Once the salmon has cured, you can serve it as is, or air-dry it for an especially buttery texture.
