Once, as I entered a Moscow restaurant, my attention was riveted by the zakuski displayed on a long table. There appeared to be tiny hedgehogs arranged in conversational clusters on a bed of chopped scallion, as if at a garden party. Closer inspection revealed them to be molded out of liver pâté, with whole cloves for the eyes and piped butter for the quills. Although aware of the Russian penchant for small woodland creatures, I was still surprised at the strange shape that fancy too
