This strongly flavored salad is a must for the zakuska table. The egg slices are traditionally arrayed on in a long oval or rectangular cut-crystal dish, then masked with mayonnaise, rather than being mixed together with it.
Peel the eggs and slice them thinly. Mix together the mayonnaise, sour cream, garlic, mustard and salt. Arrange the eggs on a platter and mask them with this mixture. Sprinkle the chopped scallion on top. Garnish with a little carrot or pimiento for color.
