  • 1 pound herring
  • 6 tablespoons olive oil
  • 3 tablespoons

Method

Prepare the herring as for pickling, soaking it if necessary and cutting it diagonally into 1-inch slices.

Mix together the olive oil and mustard. Stir in the sour cream and capers. Pour the sauce over the prepared herring and chill for several hours before serving.
