Cauliflower with Beet Mayonnaise

  • 1 head cauliflower
  • 1 tiny beet (about 1 ounce)

Method

Steam the whole head of cauliflower over boiling water for 10 minutes. Drain and chill thoroughly in the refrigerator.

Meanwhile, boil the beet until tender. Peel it and put it through a fine strainer. Mix together the sieved beet and the mayonnaise, horseradish, lemon juice and salt.

Just before serving, mask the chilled cauliflower with the beet mayonnaise, covering the top an
