Lev Tolstoy’s wife, Sophia, not only spent hours transcribing his work, she also oversaw a large household. Her private recipe collection includes such wonderful desserts as “Hot Compote,” made with sour apples, candied fruit, and meringue. Here is my adaptation.

Ingredients

Melt the butter in a large skillet. Add the apples. Sprinkle them with the lemon juice and 2 tablespoons of the sugar, stirring to coat them well.
