Place the apricot pieces in a large kettle and add just enough water to cover them. Let soak overnight.
The next day, stir the sugar into the apricots and water. Bring the mixture to a boil over medium heat. Then cook slowly, stirring, until the apricots are soft, about 30 minutes. Cool before using.
