Quick Blini

Making traditional bliny is an all-day affair, and sometimes there just isn’t time. Thank goodness for quick bliny, which take only minutes to prepare. Although they’re less elegant than the originals, they’re still delicious. Modern recipes call for baking powder, but long before chemical leaveners appeared Russians used beaten egg whites to lighten the pancakes. This easy recipe comes from the family receipt book of Russia’s great poet, Alexander Pushkin.
